Baião de Dois with green beans
Baião de Dois is a very popular dish in Brazil and is a complete meal! It often doesn't even need an accompaniment as it is quite versatile, as we can include some meats such as bacon, pepperoni and, sometimes, jerky. It is a dish where the ingredients used are simple and easy to find and it is a real delight!
The recipe I share here at TudoReceitas is a baião de two made with green beans, when the beans are not yet fully ripe. These beans are low in calories and have a strong flavor. In this case, they are served with coalho cheese and plantain. A delight!

Ingredients for making Baião de Dois with green beans:
200 grams of green beans
1 cup of parboiled rice
150 grams of desalted and minced dried meat
100 grams of chopped pepperoni sausage
100 grams of chopped bacon
1 tablespoon of olive oil
2 chopped garlic cloves
1 chopped medium onion
salt, black pepper and paprika (to taste)
green smell (to taste)
1 liter of hot water
rennet cheese (to taste)
plantain (optional)
How to make Baião de Dois with green beans:
Bring the green beans to a boil for 5 minutes. Discard the water and set aside.
Tip: This pre-cooking is necessary to keep the beans firm after being cooked with the other ingredients. It also helps to reduce dish preparation time.
Cut all meat (including desalted dried meat) into cubes, as in the photo.
Tip: How to desalt dried meat? Leave it for 24 hours in a bowl of water, changing the water 3 to 4 times or put it in boiling water, repeating the process 3 times.
In a medium saucepan, heat the olive oil and saute the chopped onion and garlic. Add meat and saute until lightly browned.
Add hot water, beans, salt, black pepper and paprika. Mix well and cook for 15 minutes.
Add rice and cook for another 20 minutes over medium heat.
Tip: Watch the rice cook, experimenting from time to time to make sure it is tender.
After this time, check if the broth has already reduced and if the rice has cooked correctly. Cover the pan and let it rest for 5 minutes to finish cooking and reduce the broth. Then add the green scent and mix gently.
If you like, saute rennet cheese and a few slices of plantain in butter, browning them lightly. These ingredients will be served with the baião de two and, in addition to being used to decorate, they also make the dish more complete!
Tip: If you prefer, add the curd cheese in cubes (without sauteing) inside the baião de Dois, at the time you add the green scent.
